This enzyme catalyses the following chemical reaction

Milk clotting activity. Preferential cleavage of Gly-Ser in B chain of insulin most rapidly, followed by Leu!Val, Cys(SOH)-Gly and Phe-Phe.

This enzyme belongs in peptidase family S53.
