What is "light cream"

n. 1 (context North America English) A cream at least 18 percent of which is fat. 2 (context US standard of identity English) pasteurized cream at least 18 percent of which, but less than 30% of which, is milkfat, optionally homogenized, and optionally containing added flavor, nutritive sweetener, emulsifier(,) or stabilizer.
