Carbohydrase is an enzyme that catalyzes the breakdown of carbohydrates into simple sugars.
Carbohydrases are produced in the pancreas but act in the stomach breaking down carbohydrates, hence the name. Carbohydrate is usually a compound consisting of carbon, hydrogen and oxygen.
