Carapulcra is a Peruvian cuisine stew of pork and dehydrated potatoes, with peanuts, aji panca and mirasol peppers, garlic, and other spices. It is a modern adaptation of a traditional Andean dish. It is usually eaten with rice, boiled potatoes or yuca.
