What is "ajiaco"

Ajiaco is a soup common to Colombia. The origin of the dish has been debated among scholars. In Bogotá, the capital of Colombia, the dish is popular and is typically made with chicken, three varieties of potatoes, and the Galinsoga parviflora herb. In Cuba it is prepared as a stew, and in Peru the dish is prepared with unique variations.
