Sirabij is one of Gilan's traditional foods. It is cooked with chopped garlic leaves. The garlic leaves are chopped with a knife, and then they are put into a pan and fried with oil. After it is fried, eggs are added. Spices are also added in, and it includes salt, pepper and turmeric. The ingredients are then mixed together. Garlic plants grow in different areas of Gilan. Green gaelic leaves are separately marketed ,especially in spring when garlic leaves are fresh and fragrant. Garlic leaves also is used for making Sirghelye.
