Injera ( Amharic: ənǧära እንጀራ ; sometimes transliterated as enjera; or "taita" Tigrinya: ጣይታ) is an East African sourdough-risen flatbread with a unique, slightly spongy texture. Traditionally made out of teff flour, it is a national dish in Ethiopia and Eritrea.
